Calphalon One Care and Use Guidelines
Calphalon publish these Care and Use instructions on their own web site, in relation to their infused anodised cookware.
NB References to Broilers means the grill section of many ovens
Before Starting to Cook
Wash the new pan and cover in soapy, hot water. Rinse well and dry. Don't season the pan before use. For best performance, keep it extremely clean. Any oily residue can cause foods to stick.
Cooking With Infused Anodised Pans
Heat Settings
We advise using a lower heat setting than you would normally. This is because Calphalon cookware heats and cools quickly as it is made of heavy gauge aluminium. It is important to use the right heat setting for the cooking method you want to use - don't be tempted to go too high or too low.
Experiment to find the right heat settings for your hob. No two hobs work alike.
Generally, we recommend:
- Low heat for warming food, simmering, and cooking delicate sauces
- Medium to medium-high heat for frying, sautéing or stir frying
- High heat for boiling and reducing liquids
Cooking Oils or Sprays
A small amount of oil, butter, or margarine is all you need to prevent sticking, providing you follow these easy steps:
- Placing chilled food in a heated pan causes sticking, even in stick-resistant pans so take the food out of the refrigerator and allow it to rest on the counter for about 10 minutes before cooking.
- Preheat the pan and oil properly (see Hob Use below)
- Always use the proper temperature to cook (see Heat Settings above)
Utensils
You can use any utensils on Calphalon One Infused Anodised, including metal, wood and nylon. Do not use sharp instruments or appliances such as electric mixers to cut, chop, or whip foods in the pan.
Hob Use
Preheating
When sautéing, stir-frying or frying, always preheat the pan at the temperature setting that you will use to cook. Preheating gives you maximum control of the cooking process. The pan is properly preheated when the rim is hot-to-touch.
Do not be tempted to preheat on high to heat the pan faster. For cooking techniques such as sautéing, stir frying, or making an omelette, preheat at medium to medium-high. This will make sure your food begins cooking properly as soon as you put it in the pan.
Tip: The Butter Test
Heat the pan over a medium to medium-high heat. When the rim of the pan is hot-to-touch, rub a little butter over the inside of the pan. When the butter begins to bubble quickly (but it should not brown), the pan is ready. If the butter begins to burn i.e. turn brown, your heat setting is too high. Carefully wipe the burned butter out of the pan with a paper towel, then lower the heat and begin the process again.
You can do the butter test even if you don't want to cook with butter. Just wipe the butter out with a paper towel and use the cooking fat of your choice, or none at all.
Heat Cooking Oils
Al you need is a small amount of butter or cooking oil when searing or sautéing. however, if your recipe specifies more, then we recommend that you follow the recipe. Allow the oil to heat for a minute before adding food to the pan. Do not use aerosol cooking sprays with Calphalon One Infused Anodised. These cooking sprays contain a chemical propellant which is difficult to remove from cookware. To keep cooking oil to a minimum, try using a mister filled with olive oil. Or alternatively, dab a bit of oil on a paper towel and just wipe the bottom of the pan with it.
PLEASE REMEMBER that short handles, higher cooking temperatures and longer cooking times can mean that handles get hot, especially Infused Anodised products. Cool V long handles on Calphalon One Infused Anodised dramatically reduce heat conduction along the handle leading to more comfortable cooking.
Oven and Broiler Use
Infused anodised pans are suitable for both oven-use and use under a broiler.
PLEASE REMEMBER that handles become very hot in the oven or broiler. Always use a potholder or glove to avoid burns.
Cleaning
Do not clean Calphalon One Infused Anodised cookware in a dishwasher. Dishwasher detergents damage the surface and using a dishwasher to clean the pan will void your Lifetime Warranty.
Hand wash your cookware well, inside and out after every use. Wash in soapy, hot water with a dishcloth or sponge.
To restore your pans to "like new" condition, we recommend washing with a green Scotch Brite pad and Bar Keeper's Friend. However, pay special attention to rinsing when you use Bar Keeper's Friend as without careful rinsing, the cleaner may occasionally leave a powdery soap film.
DO NOT USE oven cleaners or caustic cleaning solutions, baking soda, automatic dishwasher detergent, liquid bleach or liquid household cleaners used for walls, floors, ceramics, etc.
Always let your pan cool thoroughly before washing. Submerging a hot pan in water may cause irreparable warping.
For stubborn burnt-on residues, allow the pan to cool then soak in hot, soapy water for about 10 mins. Burnt-on foods will lift off after soaking.
To restore shine to stainless steel covers, wash them with a dish cloth or sponge and Bar Keeper's Friend.
As Calphalon One is handcrafted, you may notice subtle variations in the pans' finish. These "character lines" are perfectly normal - they are a natural result of the manufacturing process used.
TIP- if eggs and other foods start to stick, even after following preheating and butter test above, this is a clear sign that grease and food residue have built up on the cooking surface. Clean the pan thoroughly, following the instructions above.
Lifetime Warranty
Calphalon One Infused Anodised cookware is covered by our Lifetime Warranty. Calphalon will repair or replace any item found defective in material or workmanship when put to normal household use and cared for according to instructions. Minor imperfections, surface markings as a result of shipping, and slight colour variations are normal. This excludes damage from misuse or abuse, such as improper cleaning, overheating, dishwasher use, use of caustic or other unapproved cleaners, neglect, accident, alteration, fire, theft, or use in commercial establishments.
