The pot is called a "Tagine" because it is made to cook the traditional Moroccan "Tagine" recipe. The pot has a peaked lid to allow steam to circulate within the pot, thus increasing the flavours in the food and retaining moisture. Emile Henry's ground breaking "Flame" ceramic can withstand direct flame heat - the only ceramic strong enough to do so.
