Based on vertical roasting techniques first developed by the Chinese 2,000 years ago, the cast iron Staub vertical roaster is simple to use and designed to achieve a succulent, lean and consistent all round roast.
Stand your fowl (chicken, pheasant, pigeon etc) over the vertical prong of the dish. Heat circulates more freely and consistently around all parts of the bird and the prong cooks the bird from the inside, rather like spit roasting. The prong sears the bird from within, sealing in the natural juices. The dish (with pouring lips) collects the juices for basting and gravy.
